Fun-fetti Mug Cake

Oh yum, this was amazing!

INGREDIENTS
  • 1/4 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • Pinch of salt (very light pinch!)
  • 1/2 teaspoon baking powder
  • 1/4 cup almond or coconut milk or regular milk
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 tablespoons extra-virgin or refined coconut oil, melted (or canola or vegetable oil)
  • 2 teaspoons sprinkles
DIRECTIONS
  1. In an 8-ounce (that's a fairly standard size) mug, whisk together the flour, sugar, salt and baking powder. Make a small well and add the milk, vanilla and oil. Mix just until combined. Stir in the sprinkles.
  2. Microwave for 90 seconds at 70-80% power (adjusting as needed depending on the heat/power of your microwave). Serve warm with a dollop of frozen yogurt or ice cream, if desired.

Orange-Sesame Asian Chicken Salad

Here is another great one I don't want to forget!
Orange-Sesame Asian Chicken Salad
Recipe by Our Best Bites
Dressing
zest from one medium-large orange
1/3 cup fresh orange juice
6 tablespoons rice vinegar (seasoned or unseasoned is fine)
4 tablespoons honey
1 tablespoon chopped green onions, white ends only (reserve green parts for salad)
2 cloves garlic, roughly chopped
1 tablespoon sesame oil
1 tablespoon soy sauce
3/4 cup canola oil
1 tablespoon toasted sesame seeds
Salad Ingredients
Switch up as you like, and measure according to taste!  This recipe makes about 2 cups dressing, which is plenty for a very large party salad.
romaine lettuce
purple cabbage
cilantro leaves
chopped green onions
sliced, shredded, or julienned carrots (see tip in post)
sliced cucumbers
segmented orange slices, or chilled canned mandarin oranges
cashews or peanuts
crunchy Chinese noodles
Prepare dressing.  Wash and zest orange, and set zest aside.  Place orange juice, vinegar, honey, onions, garlic, sesame oil, and soy sauce in blender and blend until smooth.  If necessary, use a spatula to make sure honey is not stuck in bottom of blender.  With blender running on low, slowly drizzle in oil in a small, steady stream, to emulsify.  Add orange zest and pulse to combine.  Place dressing in a lidded jar and add sesame seeds, shaking to combine.  Refrigerate until ready to use.
Mix salad greens and vegetables.  Right before serving, add orange slices, nuts, and noodles.  Toss with dressing and serve.

Quick Quiche

We had this for dinner last night and it was awesome.  Super easy and it turned out perfect!  I found it on All Recipes.  Instead of bacon I used turkey lunch meat.

Graduation.... Class of 2014!!!!

Congratulations!  The day finally arrived.  We are proud of all that you've accomplished- great job!

The day she has waited for "FOREVER"!

This little beauty is finally BRACE-FREE!  Yay for her!

This is the first ortho appointment.  She was so frightened to even go to the ortho and did not know what was in store for her.
 Here she is the day she got them on.

 And voila!  They have been removed!
 Can you believe the difference a day make.... she looks so grown up!
It has been a wonderful thing to watch this girl progress and grow up in so many ways.  She has been beautiful inside and out through each stage.  I hope you will always keep that beaming smile!
